We use a high ratio of brown sugar to draw moisture out of the kiwi cells. This lowers 'Water Activity' (Aw) to a level where bacteria cannot survive, allowing us to preserve the fruit without artificial chemicals.
Molasses-Acid Balance
Kiwi is naturally sharp and tangy. Refined white sugar would make it piercingly sweet. We use Brown Sugar because its natural molasses content provides deep, caramel 'low notes' that ground the 'high notes' of the kiwi acidity.
Natural Pectin Activation
Overripe kiwis have softer pectin. By cooking them slowly with sugar, we thicken the jam naturally. We don't use industrial gelatin, which is why our jam dissolves perfectly into water for tea (unlike gummy commercial jams).
